potato kale hummus bowl

We are halfway through September, less than a week from my Birthday and 10 days and also halfway through Vegan Mofo, that’s Vegan Month of Food.

My theme?

Un-fussy food.

Back to basics. Cooked staples, rearranged all week long into deliciousness for lunch and dinner (breakfast is a smoothie).

What’s in this filling bowl?

  • purple kale, any kale variety will do
  • hummus, homemade or store bought
  • roasted potatoes, I had pretty purple ones on hand (cook a big batch on Sunday!)
  • cooked pinto beans (also cooked on Sunday!)
  • a generous helping of Frank’s hot sauce

That’s it. Meals don’t need to have a list of ingredients so long that it makes your head spin. Keep it simple. Now you have more time to go play. You’re welcome.
